Galaxy SHi @zarontavern, could you try the following and let me know how you go:
1. Update software to latest version.
Settings > Software update > Download and install
2. Clear camera cache
Settings > Apps > Camera > Storage > Clear data (this will clear any previously saved camera settings.)

I suggest sending an error report within 2-3 minutes of the issue occurring for this to be investigated. Error reports are sent to our team to identify any deviations in your device performance, once analysed, our team will get back to you with a response to advise further.
To send an error report:
Samsung Members app > Get help > Error reports > select issue category > Describe issue and frequency > Tick ‘Send system log data’ > attach screen recording of camera issue > ‘Send’ in top right.
