Seperate to OP's issue - if there was never an attempt to back it up to your Samsung account, app deletion unfortunately erased your local data
However, to see if you have a cloud backup;
* Settings > Accounts and Backup > Restore data > [Device]
* See if Samsung Health is present
If there is nothing, unfortunately it's a fresh new start...
