It should now been available through all carriers. Vodafone was the last to do so, and it was made available on late Friday I believe. You can go to your settings and check for a software update.
I have a S21 Ultra purchased directly from Samsung Australia and got the update yesterday. I'm with Telstra but installed the update using Smart Switch on my laptop
