Galaxy SI have multiple email apps on my device, email and yahoo. I want to set the yahoo app as my default email app. Selecting "Set as default" in the app's settings does nothing for either the gmail app or the yahoo app. Some apps give an error message when a default is not set. This should be easy for such an expensive device.

Galaxy SHi @cameuser, there is no option to set a default app for emails. If you tend to use one app more than the other, I suggest moving that app to your Home screen for quick access.
However, you can set compatible links to always open in Yahoo Mail if you are viewing emails from a browser. To do this, go to:
Settings > Apps > Yahoo Mail > Set as default > Go to supported URLs > In this app
Default apps can only be set for the following:
- Assistant
- Browser
- Caller ID and spam
- Home
- Phone
- SMS
