VoLTE and WiFi Calling not working anymore on S21 5G

I am in Australia and unfortunately my phone is having this issue which is really annoying. VoLTE / Wi-Fi Calling suddenly stops working when the phone loses network service or switches from 3G to 4G/5G in my Galaxy S21.

Initially, when I start using the phone after a restart, VoLTE works, but if I go into a lift, or the phone switches to 3G then back to 4G/5G, VoLTE simply will not turn back on again. The only way to make it turn back on is by restarting the entire phone. I also tested by putting the phone into Airplane mode, where the same issue occurs.
 
I  factory reset the phone and the issue came back after a day of using my phone. I also updated to the latest June firmware (G991BXXU5CVF1) and yet, the issue remains the same. Then I decided to roll back to the May update (G991BXXU5CVDD) but the same issue occurred after a day the phone was working fine.
 
This is really annoying and uncomfortable. I am not sure what else to do or what might be causing this problem. It is worth noting that the problem is not network related as it occurs in many different places across Sydney, where I live.
 
Any help or advice would be really appreciated.

I wonder if it's a sim problem. Can you pop the sim card into another phone and see if you can recreate the issue? If it does, then getting a new sim card would fix it.

Already did. It works fine in another phone. I also popped in a Sim card from another provider and the issue is the same. Definitely a phone/software issue.

Ohh on top of that, when I first detected the issues, I had an eSIM. In order to troubleshoot in other phones, I swapped to a physical Sim. The issue is the same.

Have you tried resetting just your network setting and also updating your carrier settings?

Yes. Tried that. I even uninstalled the latest carrier services just in case that was causing the problem, but same issue happens.

I beleve you can lock your network setting to one type of connection. As a test go to network settings and lock to 4G. Also on the APN settings, if you are using Telstra they have different 5G APN settings. Double check that these are being used.

Have you changed provider ? My understanding is that VoLTE is only available on Telstra, Optus, Vodafone and Boost, not other resellers.

I suggest sending an error report within 2-3 minutes of the issue occurring for this to be investigated. Error reports are sent to our team to identify any deviations in your device performance, once analysed, our team will get back to you with a response to advise further. 

To send an error report:

Samsung Members app > Get help > Error reports > select issue category > Describe issue and frequency > Tick ‘Send system log data’ > ‘Send’ in top right.

This happens when I turn flight mode on then off, VoLTE doesn't come back on. I sent an error report/feedback via the Members app.

I have the same issue- when my phone is out of wifi range there is no data. I have to restart my phone every time I go out to use mobile data
