How to factory reset my Galaxy A11

I normally do all the technical work for my disabled partner who has memory problems. She had accidentally reset her device using Google App Find Device. 
Then to restore her device she had a relative create a Google account which was also used for the Samsung account, but the relative didn't write down the password for her and doesn't remember it either. Now she has given it to me to factory reset the device to the original accounts. 
Firstly I don't understand how the device allowed it to be temporarily restored without signing into the original Google account. 
Now in the process of factory resetting the device to her original accounts I have removed the temporarily created Google account. Now when I try to remove the Samsung account it's asking for verification using the Google account I just removed and no one knows the password for. 
This is a worry because I considered it a security aid in case her device was stolen, because normally the last Google account needs to be used and added to activate the device again. 
My partner doesn't know any better due to her disability has let someone else activate her device with a new Google account also using it for the Samsung account, which she doesn't know the password for. 
So now it looks like she is stuck with a device using a Samsung account with no way of resetting the password or reinstalling the Google account. 
Does anyone know, Firstly how Samsung allowed her to activate the device using a new Google account and not the security fail safe original Google account?, 
And secondly, how do I factory reset her device and remove the Samsung account using the Gmail account no one knows the password too?

Hi Victa777, I am sorry to hear about the issues you've been having. If you own a recent model (S7 and above) you should be able to perform a factory reset without removing the Samsung account as long as you've removed all Google accounts. 

 

Just to clarify, the A11 was signed into the original Google account, and was reset from this account? Resetting from that account may have removed that account as the main security , and when logged into the temporary one, it made that one the main account.
