Open your Dialer & Click on the 3 Dot Menu Top Right > Click on Settings & Then Supplementary Services > Show your Caller ID & Change it to "Never".

You can not hide your number with texts. The only possibility would be through your Carrier, but I'm not sure if that would be possible?

I guess that you could setup a Text Now account & use a disposable number?
