Samsung notes would have to be the worst app available, the S6 edge plus had Memo and if you wrote something it would automatically save it, I wrote a song today and I was changing the title, and my whole song bar the title disappeared, so now I've lost it for ever, Samsung fix this dumb app, surely with Ai these days you could get it right.

I dislike Word because over the years it has become clunkier even when features are reduced in android. Auo-save has to be on to save. Mostly it tries to save to the cloud, which you dislike. I haved't tried Microsoft Notes which Microsoft pushes for making notes in preference to Word but I haven't tried. With Samsong backup the backup is encrypted so although you can recover through another device as long as you know the password for the original device. BTW I never trust Samsung Secure folder as some have found files lost or inaccessible after software updates (including me). There is a different way to backup the Secure Folder but you have to remember to do it.
If you do decide to use your device's backup and restore then use both options, Samsung and Google, as I do, as they do slightly different things and, as I said before, you can recover on a different device if they are on the same account.

Some ways require prior action or things you haven't done. However, it is in your hands to see if any apply as I am not familiar with your setup.

No good because I noticed that Synchronised was turned off because I didn't want my stuff going to the cloud, as I backup my phone on a hardrive, so maybe I can't retrieve it then, thanks for trying But it still should automatically save until I delete it not my phone.

With the previous app memo on Samsung S6 Edge Plus, it wouldn't matter if you turned your phone off or anything it would always save what you'd written, I informed Samsung about it in about 2020 and they did nothing about it.
