For some reason my S21+ lost just about everything and now I have no contacts app at all. The main thing is that the phone won't let me set app defaults and several other issues aren't working either. I did nothing for all this to happen and even Samsung tech help doesn't seem to understand that the phone just changed everything on its own. HELP! but mainly with setting default apps and getting back the apps I lost. Oh and the phone also replicated several apps several times. It's driving me crazy

That's certainly unusual! I would definitely recommend restoring a back up first to see if you can re-access your data, and if this would assist with the other issues. If this does not, I suggest doing a factory reset.
