Galaxy AI recently switched the email for my samsung account from an old one to a newer email address. When I looked in my text messages, I noticed that a lot of my contacts are gone; it just shows phone numbers where the names used to be. How can I get the contacts back?

It must've been because you've had your contacts saved/synced only under the previous samsung email. What I'd advise you to do is to re-add your old email back to your phone and sync it so the names appear once again.
In the contact app, click on the 3 lines at the top left of the screen and click on manage contacts. You can either export your contacts to a vCard file to save then and re-import them into phone or whichever account you want or move them directly from that screen.
