Galaxy SIt's probably slightly different from One UI V6.0 on my S23 Ultra, but start by Going to Settings & Search for Always On Display. You should see something similar to the first screen shot & Click where it is highlighted.
Then you should see something similar to the 2nd screen shot & Click on the Toggle for Auto Brightness & it should give you the option to change the Brightness level of AOD.

Galaxy SSearching for "brightness" doesn't show that they've hidden it somewhere else?
I know that over the years, some of the updates move things around, and are not always particularly intuitive..
