When I plug my wired headphones in with a 3.5mm  to USB-C adapter my S22 will automatically play audio from the last source I was using, for example a podcast app or Spotify, even if those apps are closed. How can I stop this? Can't seem to find a setting anywhere.
Thanks.

What music app are you using?

There should be a "Pause / Resume" Toggle or "Autoplay" in it's Settings when you Connect / Disconnect your headphones.

I use Spotify and can't find that option anywhere. For podcasts I use Podcast Addict and that toggle is already turned off, but it still auto-plays

To enter Safe Mode, please perform the following :

1.First, completely power off the phone.

2.Then, power on the phone and when the Samsung logo appears, press and hold down the Volume down key.

3.If done correctly, "Safe Mode" will display on the bottom left corner of the screen. If "Safe Mode" does not appear, repeat the steps above.

4.Once you are in Safe Mode, you can remove the third-party app that is causing issues on your phone.

5.To exit Safe Mode, simply restart your phone and it will reboot normally.

Why would you suggest Safe Mode?

Some apps will automatically start playback. Looks like with Wired Headphones, Spotify is one of them.

Since Safe Mode will disable Spotify (3rd party app), your suggestion makes no sense.

Other music players, such as PowerAmp have a Toggle in it's Settings to disable automatic Playback when connected to headphones / earbuds.

Spotify does not. However, Spotify does NOT start automatically with Bluetooth Earbuds, at least not Jabra or Sennheiser BT buds.

This is another post that you aught to delete.
