A few days ago on my S10, my volume buttons stopped changing the volume when holding them down. I can only change the volume in increments one press at a time. The only thing that seems to temporarily fix it is restarting the phone. But then the issue comes back after a bit.

Bless you, sir.  This solved it, finally.

This issue has been driving me crazy!  And I never even enabled Google to do all that stuff in the first place.  Thank you for this fix!

I'm also having the same issue. I noticed today but it was definitely fine as of 2 days ago.

Hi Lara, Please try disabling the Google assistant as suggested by @Omar_dr and check if the issue got resolved.

I did another restart and that seemed to have helped so far. I use my Google assistant so I won't be doing that and shouldn't have to disable it for my volume to work.

I was able to fix it by force stopping the Google app. Try that if it comes back.

it worked for a few days and now its back. if I'm listening to YT music, it works fine but any other time the volume only moves in increments.

I was having the same issue (Galaxy S10+). I disabled the Google Assistant, and now it seems to be working fine.

I'm having the exact same issue, restarting the phone has an effect for like 10 seconds. Deactivating Google Assistant is also not working for me, clearly this is a sw problem
