Galaxy SYou should still be able to keep 3 apps "open".
Click / Swipe to show Recents > Click on the App's Icon & Click on "Keep Open".
Again you can only have 3 Apps selected.
If it's actually not there, try this :
- Boot into Recovery & Wipe Cache.
- Still not there, you could Backup your device with Smart Switch & Factory Reset. The "Keep Open" has not been removed from the UI.
Instructions on how to Wipe Cache & Factory Reset Below:
Power of your device & Wait a few seconds.
Press & HOLD the Power + Volume UP buttons, until you feel the device vibrate. Release BOTH buttons & wait a couple of seconds until you see the Recovery Menu.
Use the Volume button to Scroll down to Wipe Cache & Select with the Power button.
Wait a few seconds until the Recovery Menu Defaults to "Restart Now" & Select with the Power Button.
Your device will Reboot.
Factory Reset is the same as above, but instead of Selecting Wipe Cache, you Select Wipe Data Factory Reset.
⚠️⚠️⚠️
BEFORE you Factory Reset, BACKUP your device with Smart Switch.
When your device Boots up, it will be to the Welcome screen, same as when you first received your device as new.
⚠️You'll need to know your passwords etc, So write them down if you need to⚠️

Galaxy SCan you post a screen shot what you see when you select Recents (Either by Gestures or Nav Bar). To get the screen shot, you'll need to use the Power + Volume DOWN method.
ie:

Galaxy SYour screen shot doesn't look like you are displaying Recents?
In this first screen shot, you can see that it's clearly showing Recents, and that's the only way to select "Keep Open".
The 2nd screen shot shows that you can see another recent app on the left side of the screen shot.

Galaxy SI believe you, it just doesn't look like the Recents on my device.
Did you have a couple of other apps open in the background, when you selected Recents?
I'm just asking because I always see the edge of at least one other app when I click on Recents.. maybe I'm having a Stevie Wonder moment?
It shouldn't make a difference, but if you click on Settings in Recents (Top Right) & Toggle ON, "Show Suggested Apps" and then try to select "Keep Open", any difference for you?
