Galaxy SThere have been posts on here using all devices including the S25 Ultra saying they are having battery issues with One UI 7.
Hopefully there will be an update coming soon to fix the problem.
Also try going to Settings, Battery and see if there any apps using excess amount of battery
Have you booted into recovery mode and wipe the cache. That is about all you can do till the update comes.

We are sorry to hear that your'e experiencing this issue after update. If you haven't tried yet, please try the below suggestions:
Review app activity. Go to Settings > Battery > Usage since last full charge to check if any apps are consuming more power than usual. Consider limiting background activity for those apps.
Put unused apps to sleep. Settings > Battery > Background usage limits > Enable Put unused apps to sleep.
Disable Always On Display and Location Services. If not essential, turning off Always On Display and GPS when not in use can help conserve battery.
Use Power Saving Mode. Settings > Battery > Power saving: You can customize this mode to suit your needs without losing full functionality.
Check for app updates. Make sure your apps are updated via the Galaxy Store and Play Store, as some may not be fully optimized for One UI 7 yet.
Wipe cache partition. Power off the device > Press and hold Volume Up + Power > In Recovery Mode, select Wipe cache partition (use volume keys to navigate and power button to select).
(No data will be lost.)
If the battery drain persists, please submit an error report through the Samsung Members app: Samsung Members > Support > Send feedback > Error reports > Battery.
