Does anyone know when the update is being released, I thought today was the rollout for Canada but the days almost over and still no sign of it

I just got it on the S24 Ultra; it might be out in a few days, maybe longer. They normally roll them out sequentially. The S25 gets it first, then the S24, then the S23, then the S22, and so on.
