Galaxy SHi NashNHH, which messaging app are you using? Is it Google messages?
Google Messages tends to be the default for most. It follows your system colors, so if you have a blue based color pallet active, it should make your message colors blue as well.
They also change colors a bit depending if the message is SMS/MMS or RCS, which varies by each individual chat.

Galaxy SThe Google messages app has consistent colours throughout all texts, and they are consistent in all chats. All chats have the same colour and all texts have the same but different colour. They do not change per conversation or text string.
