In One UI, you can indeed arrange your apps alphabetically, and the app drawer will scroll vertically by default:

Open the App Drawer.

Tap the three dots in the upper-right corner of the search bar.

Tap Sort, then select Alphabetical order.
This will arrange your apps in alphabetical order, but they will still scroll vertically.
If you'd like to change the scrolling behavior to horizontal:

Tap the three dots in the upper-right corner of the search bar.

Tap Sort, and then choose Custom order.
When Custom order is selected, your apps will be organized based on the order you choose, and the scrolling will change to horizontal.
Unfortunately, horizontal scrolling and alphabetical sorting don't quite go together in the default settings, but this offers the flexibility to choose either alphabetical order (with vertical scrolling) or custom arrangement with horizontal scrolling.
