If your device is running One UI V5.0, there is no longer an option to turn off auto optimization. You can only turn off auto Restart. 

It's likely that any WiFi issues you have, are unrelated to the auto optimization. 

You could reset your network settings, and see if your WiFi connectivity improves. 

While it seems that it would be unlikely to resolve a WiFi problem, you could always Boot into Recovery & Wipe Cache.

Hi, as suggested by the RedDogRabbit please try to reset network settings on your phone .

1. Go to Settings, and then select General management.

2. Find and select Reset.

3. Choose Reset network settings.

4. Tap on the Reset settings button.

5. Tap on the Reset button.

Note: When you reset the network settings, the Wi-Fi information connection are reset.

If that doesn't work, we request you to perform wipe cache partition on the device and check the issue. This will not erase personal data on the phone.

1) Turn off the device.

2) Press and hold the Volume Up key and the Power Key.

3) When the Android logo displays, release all keys.(("Installing system update" is displayed before displaying the Android system recovery menu options).

4) Press the Volume down key several times to highlight “wipe cache partition.”

5) Press the Power key to select.

6) Press the Volume down key to highlight “yes” and press the Power key to select.

7) When the wipe cache partition is complete, “Reboot system now” is highlighted.

8)Press the Power key to restart the device.
