Go to settings > Accounts and backup > manage accounts > select google > google account > go to the security tab > scroll down to devices. You will have the list of devices linked to you your account and able to delete the ones you want to remove.

Remove it from your account if you don't have the phone anymore.

Is there a way to make sure they can't access it..because when I change my password it says you'll stay signed in on these devices and my sold phone is one of them..is there a way to change that?

What i ALWAYS do when i get rid on my phones is remove all my accounts from the phone then factory reset. Then on my new phone i go into my account and remove my old phone.

Not necessarily but its always safer to remove it. You never know in who's hands your phone ends up in.
