Incognito mode, no you can't view what sites have been visited.
Yes there are keyboard loggers that can tell you what has been typed.
For the rest... if anyone is as concerned about, what is essentially spying on the use of a device, simple solution, don't let others, whom you can't / don't trust, have access to your device.

Thank you RedDogRabbit. Hi, as suggested by RedDogRabbit, when the browser or app is on Incognito mode, it will not save any data or the keywords used to search.
