Hi,
With my Samsung Watch 7 Ultra, I had some issues with the sleep data. There was always a large gap in the middle of the night, or it only started to register my sleep about 3 hours later.
Here's what I did, and it fixed my issue.
I hope it works for you as well.
I followed the steps in this link but skipped step 9.
That helped, but what ultimately fixed the issue was clearing the cache and storage of the Samsung Health app on my phone.
Since then, I haven't had any gaps in my sleep data for the past two nights, and all the readings, such as REM, deep sleep, etc., seem accurate now.
