One UI 8.0 recently updated onto my tablet - an S8 Plus. After that happened, the multi-touch stopped working - tapping 3 or 4 fingers on the screen caused the active app to think I was trying to zoom in/out, or it would jitter around, or just nothing. Thought maybe it was a bad screen protector, or my case magnets had started to affect the tablet, but replacing the screen protector did nothing, and then I noticed multi-touch would start working again if I did a force restart, until... screen lock and unlocking via fingerprint. Then no more multi-touch again.
Turns out the fingerprint scanner is messing with the touch recognition. The fix (at least until Samsung fixes it) is to go to Setting / Lock screen / Screen lock and biometrics / Fingerprints and just turn off the Fingerprint unlock setting. (don't remove your fingerprints from the device, that was an unnecessary step that was suggested to me by AI, and it makes you have to re-enable biometrics for all the apps you used it for)
Yes, you need to unlock the screen with a PIN going forward instead of fingerprints, but multi-touch will stay perfect; and apps can still use fingerprints to unlock if you choose.
I've submitted a bug report through the members app (I think, I hope it went through) - kind of hoping it's impacting enough people that it gets fixed (and soon)

Test without accessories (screen protectors, magnetic cases) to rule out external interference.
