One UI does not typically offer an option to revert specific features like the notification panel style back to a previous version. Once you have updated to One UI 6.0, the changes are generally permanent, and Samsung doesn't provide a built-in way to switch back to the previous notification panel style.
However, there are a few potential way for you to try:
1. You might use third-party customization apps available on the applications store to modify the appearance of your notification panel. Apps like Good Lock or other launcher apps may offer some customization options.
