is there a way to upgrade the SSD on my galaxy book pro 360 13.3" i7 8GB RAM laptop？

Hi, the laptop itself comes with the 8 GB LPDDR4x Memory (On BD 8 GB) and 512 GB NVMe SSD whith 1 Number of SSD Slot. However, please contact Samsung Authorized Service Centers before you replace or add storage and memory for compatibility check.

SSD can be upgraded. But if you are not familiar computer hardware, take it to computer shop or Samsung Authorized Service Centers is the best choice.
