How can I roll back the latest Samsung Health update? It no longer allows me to enter my SPO2 levels, and it's vitally important for me to keep track of those numbers.

Just download the version you want from apk mirror (it's very safe).
Sync the currently installed version of Samsung Health & then Uninstall it.
Install the apk that you just Downloaded from apk mirror.
⚠️⚠️TURN OFF Auto Update on the Play Store & The Galaxy Store FIRST ⚠️⚠️
Otherwise it will update to the version you don't want!
Finally Sign into Samsung Health & Sync to restore your data.
