Galaxy S- Wiped cache partition the same day I updated
- Disabled Bitdefender, which was using battery in the background
- No overheating, no misbehaving apps, and the phone is only 8 months old
- No unusual app usage—just regular apps

Galaxy SI have a S24 that updated also but have not noticed any unusual battery usage since the update
Sounds like you have tried some troubleshooting steps with no help to your device
If mine I would check under battery use and see which app or apps are draining the battery and close or disable them to see if it helps
Boot into recovery and wipe the cache which it sounds like you have done but try it again
With the update it is normal to have higher battery consumption for a bit because of way more use setting it up and adjusting things for a while but should settle back near normal after a week or so and after the phone adjusts to the new operating environment.
If all else fails you should back up your device with smart switch and factory reset making sure you know your passwords to get back into your accounts
As for your phone dying shortly after 5% - the battery meter might not be reading exactly right as it is just an approximation of battery left so it might actually be lower than what is reported. You shouldn't normally run your phone down to that level anyways very often as I don't think it is great for the battery

After major updates like One UI 7, some users may experience temporary battery drain due to system re-optimization and app compatibility. However, rapid shutdowns at 5% are not expected behavior and should not be ignored.
Even if everything seems fine on the surface, a technician visit is recommended to run a battery calibration check and verify if a software-level battery reporting error or rare battery cell degradation may be occurring.
