I used to record my lab microscope work easily using Samsung S9 because it has only one camera. But S23 ultra has many cameras and it keep switching from camera to another when I put it closer to the microscope lens.

How to force it to use only one camera at a time

This may not be exactly what you are looking for, but see if you can get the results you want.

Open the Camera & Select Pro Mode & then Telephoto (obviously not using the microscope), Although maybe?

See if using the telephoto lens for macrophotography gets you what you want?

Only other thing that I can think of at the moment, cover the lenses you don't want to use with some "lens safe" tape?

Download "expert raw" from samsung store or playstore. Open the app. Use 3x camera (W signed) ) (may be 10x, but 3x is enough for biological light microscope). It tooks raw pictures and also auto renders jpeg's. You may use "Lightroom" app to render yourself but it does not necessary. Expert raw renders automatically in a few seconds after the picture is shot.
