Galaxy SActually, yes if you delete all the texts from one contact, then the notification reverts to the Default Samsung Notification setting, this is with Google Messages. I don't use Samsung's.

Galaxy SFor Google messages, open one of your messages, click on the 3 dots top right, click on details, notifications, and scroll down to sounds and choose your custom one.

Galaxy SI tried the above for both texting apps.
When I delete the whole conversation, the notification soud goes back to the default.

Galaxy SIt also makes sense since the custom notification sound is set in the messages app and not through the contacts app
