So I just got my s24 ultra today but I don't know if it's still safe to update to the one ui7 yet, considering the fact I've seen many complaints about it. Should I update it or not?

If your phone is brand new it's very likely going to use ui7.

If it is a phone someone gave to you and who chose not to update and stayed with the previous UI then I would say not to upgrade. But again if it's new you might be stuck with it anyway.

This phone used to kick serious ***. I managed to get so many people to buy it based on the portrait studio feature alone and all the other cool things I could do on it. There were even massive amounts of media touting the s24 as the best on the market because of the camera abilities which has now been severely downgraded. Colors are off, heavily saturated and Samsung recommends changing those images that, in my particular case, I wanted for my lock screen. That's not an answer to the over processed and highly saturated images. I'd like to add the image I want to add. This just points to more evidence that the user has to make exceptions for this awful UI 7.0 rather than having an actual fix.

Basically 7.0 is a massive downgrade including in the most important areas not just in features. That would include the camera quality which is terrible and not even close to the quality of the previous UI and in the older version there was a more streamlined and simpler way to use the hey Google Assistant. On this one it rarely calls anyone from your contact list and you have to sometimes open your phone for it to call and other times it will show you places on the Internet and ask you to pick one. Often, you have to use your hands to do this because the mic shuts off. On a rare occasion it will stay on like it used to so you can have a continuing discussion but mostly at least in my experience, the mic just shuts off. It often also just call a random number.

UI 7.0 is essentially taking away from all of the bonuses of having an s24: amazing AI that topped anything Apple came out with by Miles, and basic functionality of a modern smartphone in terms of hands-free options. You have to go manual many times as in my previous example to you about calling people in your contact list. This phone used to be known for taking really great shots in the night now you can barely see anything. It's not just what you're reading on the Forum. Everyone that I know with 7.0 personally wants to trash their phone and a lot of people are saying they won't go back to Samsung for their next phone and have lost trust in the upcoming 8.0.

Also, the most common complaint, I think, is the battery drainage. I was at 100 when I started to answer this comment and I have just dropped to 97%. It isn't even like I'm typing this out I'm using speech to text.. which by the way I had to retrain my voice model many times.

The answering bot(?) from Samsung will tell you to wipe your cache partition in safe mode. It doesn't change anything. It will also tell you to go back in time manually by decreasing the brightness of your screen and changing your battery settings and will recommend eco mode just to save the life of the battery. That's not what people paid for. And this last paragraph, still being dictated speech to text, has now dropped me to 95%.

I think for me a huge improvement in one ui7 would be the ability to enable Bluetooth icon to show in the status bar at all times when on, like it used to, without having to swipe down to check if you're connected to a Bluetooth device. If this could be re-enabled using a good lock setting that would be sufficient.
Also, the ability to swipe inwards from a corner to activate your assistant was incredibly useful because some of us use the side button for other shortcuts like flashlight and camera, so if that option can be brought back even as a toggle in navstar or something like that that would be a major quality of use improvement
