Galaxy SYou can always go to your Browser for example, and select which one you want to use as the Default Browser.
You would need to do it individually for each app you want as the Default..
You asked how to Reset Defaults, and my first reply answered that question.

Yes, with One UI 7.0, Samsung has restructured parts of the app settings interface, and "Open by default" or "Set as default" may no longer appear in the same location.
If you'd like more visibility or control over this, we recommend sharing your feedback via the Samsung Members app so it can be considered for future updates.
