So I finally figured it out after a few weeks. I looked everywhere for the answer and I couldn't find it so I had to figure out why I would press the spacebar once and it would do a double space.

This happens when you decide to remove the "show or hide keyboard" arrow.

when I removed this on the keyboard sat on the bottom of the screen it would double-space with both Samsung and gboard.

I then used the Samsung keyboard and placed it a little higher so it wasn't sitting right at the bottom of the screen and it stop double spacing.

Then to conclude because I personally like the gboard better, I added the show or hide keyboard back and what do you know no more double spacing.

I don't know if this is just the sensitivity of the screen right down the bottom but it has been really annoying.

I hope this helps someone if they needed the answer as desperately as I did

Hey PB,
Thanks for sharing this information with the community here.
I suggest you to follow the below steps on your phone to turn on the auto spacing option for Samsung Keyboard.
Go To Settings> General Management> Tap "Language and input"> "On-screen keyboard"> then "Samsung Keyboard"> Tap "Smart typing"> Auto Spacing> Select one language from the available list.
If the problem persists, please attach some screenshots of the issue here.
