Galaxy SI don't use Google Gemini, and Google Assistant doesn't have any issues with: Hey Google, call xxxx
Switch back to Google Assistant if you're currently using Gemini, see if that works for you.
You could also try Clearing BOTH Cache & Data for Google Assistant, set it up again and test.

Galaxy SWhen I use Google Assistant, does that mean I won't have access to Gemini AI for things like creating images Etc? Would I have to toggle them back on and off to utilize those features that I enjoy?
Also how do I switch to Google Assistant?
Sorry for all the questions it's hard for me to keep track with how fast technology is advancing.

From now on, if I have issues I will just toggle between the two because I do like to create a i art with Gemini.
