Galaxy AOnly thing that I can think of.. if it's only happening when you change the time, if you're occasionally selecting am instead of pm & you are doing the change in the afternoon / evening, so it's bumping the date into the next day.. if that makes any sense?

Galaxy AHi, it might be due to a glitch or a setting. Here are a few things you can check:
1. Time Zone Settings:
Ensure that the time zone settings for both your device and the Google Calendar app are correctly configured. Sometimes, discrepancies in time zones can lead to date shifts.
2. App Updates:
Make sure that your Google Calendar app is updated to the latest version. Outdated versions may have bugs that could be causing this issue.
3. Syncing Issues:
Check the syncing settings of your Google Calendar app. Sometimes, syncing problems can lead to incorrect date and time changes.
4. Device Settings:
Verify that your device's date and time settings are accurate and set to the correct time zone. Any discrepancies here can affect the events in your calendar.
5. Cache and Data:
Clear the cache and data of the Google Calendar app. This can resolve potential glitches that may be causing the problem.
