UI 2.0 from where?

I  have an unlocked  Asian version Note 9 (Hong Kong) and received the UI 2.0 and January security update on Feb. 19th.  My carrier is Virgin. Where is the uptate from. I expect it will come with Canadian reliese in March since I use the Virgin sim card which will tie me to the Canadian carrier. Any explanation would be appreciated.

It came from Hong Kong. Canadian models still don't have the update, and the carrier is irrelevant

I assume once the sim card is inserted, all settings will lock to the carrier. Am I wrong?
