They streamlined that setting directly onto the camera top bar. The aspect ratio selection will now change the resolution. This was changed a while ago in Android 10 or 11 (I can't recall). Unfortunately these videos are most likely outdated and don't reflect the changes made with recent OS upgrades.
Plenty of changes have been made in menu setups, etc since going from 9 to 12.
