Galaxy SSome apps start crashing in the background after this update, including Galaxy Buds Pro manager. Wiping the cache or even reinstalling the apps isn't working...

Galaxy SI'd suggest Booting into Safe Mode, EXCEPT that Safe Mode disables 3rd party apps, and not sure if Galaxy Buds Manager will get Disabled in Safe Mode, even though it is a Samsung app, but not a System app.
Other than that, since you already tried Wiping Cache, backup your device with Smart Switch & Factory Reset.
But I've got to say, I don't know why some people's devices have issues after updates, unless there's something else going on. I've never had any issues with apps after regular updates, or even when testing Custom Roms..
Anyway, you can always try Wiping Cache again.. Safe Mode (Disables 3rd party apps so..) or Factory Reset, but I'm pretty sure that it's not a problem with the update.
