Galaxy STry Clearing Cache & Data for Instagram & Reboot.
See if that resolves the issue.
Personally, after any Android version updates, I always backup my phone with smart switch & factory reset.
In a decade, I've never had any problems.

Galaxy SI'm in an alpha group for IG testing so I'm not sure if this will work for you or not.

Galaxy SIf the issue is widespread, & it's likely, then a "hot fix" should be made available fairly soon. So you could wait for that.
If you really want to revert to the previous version, you can *IF* the Bootloader version hasn't changed. If it has then you can't.
If you're able to, you would have to download the previous version to your computer & Flash it with Odin.
