Galaxy SI don't use Android Auto but you may be able to change or set the language in the Google app.
Open Google app.
Tap on the top right corner where you see your initials.
Settings.
Language and region.
Search language. Select the language you want Google Assistant to speak in.
You may also check on the Search region and see if changing the region may change things.
As well, check Voice and see what languages is selected and make the changes there.
If it's not there, you may need to download the language under: Offline speech recognition.

Galaxy SI see this changes the language for Google assistant, doesn't change the android auto guidance audio language.

Galaxy SI will may be try to install app from playstore. There it should work fine as I have used it before on another device.
