Galaxy SI love my S20 Ultra!
If you're having issues & you updated to One UI V3.0, I'd strongly recommend you backup your phone with smart switch & factory reset.
I use SwiftKey keyboard & I've never had any problems. I can't comment on the Samsung keyboard because the only time I ever used it was during the initial setup & after a factory reset.
Other than the missing Heart Rate sensor (which Samsung unfortunately removed), this is probably one of the best Samsung phones I have ever owned.
I've never, ever seen any apps settings get changed, or any settings for that matter.
FYI, I have had Samsung phones for the last decade.

Galaxy SHi DebbieB, We regret the inconvenience caused to you. Could you please provide more details about the issue so that we could help you. Could you please let us know which keyboard application you are using. I suggest you please try changing to another keyboard and check if there is any issue with the space bar.

Galaxy SThe keyboard was just one of the issues Debbie was complaining about. Apps not working & Settings getting changed are probably more important to her than the keyboard issue, which is easy enough to correct. But it sounds like there's "bigger fish to fry".
