My s25 ultra camera is trash compared to my pixel 9proxl. My newborn has dark hair, and it shows like a green hue around it. Almost like hair dye.  Will this be updated at all? It only happens indoors but outdoors it makes his skin very yellow . Camera almost looks terrible .

Go to the Camera's Settings > Intelligent Optimization & Toggle Off Scene Optimizer if you have it Toggled ON.

As said by RedDogRabbit, please try disabling Scene Optimizer under Camera Settings > Intelligent Optimization can help reduce over-processing and unnatural color shifts.
