Galaxy SYes, Google Photos is a System App on the S25 series.
I suspect that Samsung has made the decision to not reinvent the wheel, and is moving towards using Google apps as the preferred option.
Some will I am certain, not be pleased, but Google Messages for example, has always been a more widely compatible app with RCS for example. Google Photos backups to Google Drive or Google One, might be a better choice than Microsoft's One Drive?
I think that you will ultimately be able to uninstall Samsung's Gallery app, but as you can see from the screen shots below, Samsung's Gallery app is using a minimal amount of storage.
Oddly enough, you do have the option to Disable Google Photos, but not Samsung's Gallery app.
