hi, where do you edit your videos? mac or pc or phone?? maybe your editing software compresses your file.. (not sure about this one)
uploading it on instagram and some social media sites alters video quality due to file compression. just an fyi..

hmmm.. but the raw files on your phone are ok? no problem with video quality?
also, did you try wiping cache after the update... hope this one helps.... if you're not sure about this try wait for others if they have solution with your issue..
here's how to wipe cache
1. turn off your phone
2. press hold volume up and power button at the same time.
3. wait till samsung logo appear then release.
4. use volume down button to scroll menu to wipe cache partition.
5. use power button to execute.
6. once done, use volume up button to scroll to reboot system.
hope this one helps.. let us know if it works. thank you.

I think it's from your settings. Try reset to default on your video editor.
