Galaxy SAre you using the Samsung Calendar or Google calendar?
I've noticed that with the Google Calendar, sometimes adding the Icon / Shortcut to the desktop, it didn't change to the current date for me.
Just removing the shortcut from the desktop & adding it back worked for me.. Maybe it's the same with Samsung's Calendar, if that's what you are using?

Galaxy SI'm not even sure, how you got the entire calendar on the Lockscreen. 🤔
I was thinking that you just meant having the current day's date displayed.

Galaxy SWhich model of Samsung phone do you have, and what version of One UI is running on your device?
If you could post a screen shot of where it is in your Settings, that could be helpful.
To take a screen shot, you can use Bixby (I'm told, as I don't use Bixby), Quickly Press & release the Power & Volume DOWN buttons, or if it is enabled on your device, a Palm Swipe across the screen screen with the side of your hand.
