is Samsung Internet SAFE to use on mobile phones? I tried googling it laptop to find out BUT ai keeps getting in the way, reason I asked is I want to start using Samsung Internet that came with the phone, chrome is getting too intrusive with ai. so is it safe?

Yes it is safe, I use it everyday with no issues and an ad blocker.

i don't like google AI but am stuck with it, just won't use my phone for anything except calling/texting

Go to settings.
Then to apps.
At the top it says choose default apps, click it and make your browser app default to samsung internet.
