Does anyone know how to disable the new headers I.e go into SMS and it says MESSAGES at the top?

When sending a picture in SMS it shows my gallery and also shows the gallery icon to view my gallery. Can we remove that gallery icon?

In recent apps you swipe up to close an app. Anyway that can be changed to left or right like every other area on the phone?
