Latest update completely broke Bluetooth connection to my car, very occasionally auto connects but always connects "calls" but never audio, I have to manually toggle it on and off every time to make it work, this was not an issue with the previous version. Quite disappointed with having to deal with this.

Update:
From everything I've read in your replies, cars with android auto dont seem to have this issue but those without (basic infotainment system Bluetooth connections for audio/calling) are, I have successfully replicated this exact same issue with an S24 and a Google Pixel 7 Pro. I started them both on android 15 and had no issues then upgraded them both to 16 and the Bluetooth issues started repeating. I have also noticed that other somewhat older Bluetooth devices are having this same "connection" issue, only tested with a handful of speakers but the problems are still the same.

Same issue here with a Samsung Flip 6 Bluetooth connection to my 2010 Acura. Since the "Android update to 16.0 and One UI 8.0" it connects to calls but not to audio without toggling the Bluetooth audio to the on position.  My wife's S24 has the exact same problem.  My old S9 connects just fine.  I've tried all of the suggested "fixes" except for the reset to factory settings.  I don't believe that the reset to factory settings will fix the problem since everything was fine until this latest update.

Im also having issues with Blutooth since the Android 16 update.

Car is a 2022 corsa ultimate.

Done network reset, cleared andriod auto cache, unpaired and repaired, restarted both phone and infotainment system.

Happening to me as well. Before the 16 update the bluetooth audio and call automatically connected even when I'm in the house but now even after I get in the car I have to toggle the audio option from settings many times till it finally catches up. From what I read in the thread its mostly Mitsubishi Head units having this issue after the update and I got a 2017 mitsubishi Outlander with basic head unit and a s23 ultra. Even my friend with a 24 Ultra and a 2017 Honda accord with carplay is facing the same issue. Hopefully it gets a fix soon because it takes a good 5-10 mins before starting the drive to fix this through toggling Audio button many times.

I have the same issue with A55 and car Citroen C4 Aircross (disguised Mitsubishi ASX) 2015. It is very frustrating, because before podcasts would start every time I started driving. Now, if I want to listen podcasts, I have to wait for everything to start, and then fix audio connection, as it does not start by itself.

I tried to make an app that would start in "Modes and Routines". My idea was that when car would connect an app would start that would switch off bluetooth for a while (a minute). During that time car infotaimnent would boot with all services up. Then bluetooth would switch on again with all services up and everything would connect properly. I tried that manually with my phone. I start the car and switch off bluetooth. When car starts and all systems boot up I switch on bluetooth and it usually connects as it should.

However, there is an obstacle in android preventing applications to switch bluetooth off. Here is more information available https://developer.android.com/reference/android/bluetooth/BluetoothAdapter#disable().

I was also thinking an app could monitor for a specific device if audio is connected and try to switch off/on until it would connect. I am also not sure that can be done just with an app.

I'm having the same exact issues. I'm also getting around it by going into the Bluetooth settings and enabling audio but it only works for that connection. When I restart the car I have to do it again. Everything was working fine before the update.

S22 Ultra and 2015 Mitsubishi Lancer Evolution X.

Same but with garmin watch. Infuriating. I genuinely am fed up with Samsung's inability to roll out updates on a timely manner and without significant bugs.
