Running Samsung Health now informs that it will not open on a device that has been rooted due to a new security policy.

I'm not sure what they're thinking about this. as an owner of a Gear S3 that I use for running, I will sadly not be using it anymore :(

Secondly, my device is not even rooted but has Knox tripped due to previously installed firmware. My device is now running stock firmware, unmodified. What gives??

Should I be considering Android Wear and Google Health instead?

have you tried to factory reset your phone?

it was factory reset when I reflashed the stock firmware

When reflashing, did you use smart switch to reinitialize your phone? Or did you use stock firmware downloaded from any website?
If not, then using Smart Sync desktop app and use reinitialize function. It should be easy to perform this task just follow instruction on screen. This will put your phone on factory state. It will replace recovery and rom to official samsung.
Keep posting if problem persist or if it is fixed.

I downloaded the firmware and flashed with Odin. I'll try SmartSwitch.
