My galaxy watch 6 classic has been acting weirdly recently, even after a reset, the heart rate data has extreme gaps in it, even when wearing it normally all day. It just stops tracking. I had this problem before, and was told my phone needed an upgrade, so I upgraded from the A71 to the S23 FE, and I am experiencing this issue again.

I can see that you have tried the following:
- Reset the watch
- Clean the watch
- Changed phone from A71 to S23 FE
- Clear Samsung Health cache
- Sensor permission allowed
Just one more question, are you wear your warch tight or loose? If your watch and your skin has gap, you will also have no data while sleeping. If the watch is tight enough, maybe there is something cause the problem. Because you have changed phone from A71 to S23 FE, still having problem again.
You can try reset your phone. But this will be the last solution if nothing works. Since you have no problem from the beginning, can be some software bugs cause the problem.

In this case, you may consider do a factory reset of your phone. Make sure you do a full backup before proceed.

On your watch, go to settings - apps - permission manager - sensors and make sure that Samsung Health is set to allow all the time.

This thread is a perfect example of why you should have the ability to pair a heart rate strap to your watch. Its impossible.
