Galaxy SI wouldn't ever not want the update, but it's your phone.
You can try Clearing Cache AND Data from software updates. Clearing cache alone won't do anything.

Galaxy SThe ONLY other possible way would be to perform a factory reset, You will however still have a notification that an update is available, but I would never refuse any updates to the android version, not to mention Google does monthly security patch updates for a reason!
